You play low chaos vs dwarves different then high chaos vs dwarves.
First you need to identify the biggest threat in your opponents line up. (Players with claw + mb) then block that guy if necessary foul him don't let that guy come back up. Don't let him divide your dwarves and keep you guard wall together. Do not follow up a pushed opponent if you cannot protect that dwarf with guard.
With a high TV, well, you just die horribly with dwarfs most of the time against chaos :)
Other then that, learn how to chainpush and to position your players in such a way that you get the most assists while they get only few. You have block and they don't, at least with a low tv, that makes 1d blocks a lot better for you.
Then it would have been the same against almost any other team, as Chaos are probably the worst team in the game at low TV atm.

at high tv you loose out to chaos (as do orcs), because all the claw makes your nice high armour become pretty pointless. However... dwarfs are much better at beating up elfs and skaven and whatnot than chaos at any TV because of all the tackle.
Assuming you have 2 blitzers and 2 troll slayers...when defending....start these guys out 2-3 squares back and on the sides (not right on the sides 3 squares in). Their job will be to move to the ball carrier and the cage. Supported by the 2-3 lines men (and a thrower if you have em).
He has no block. So making his beastmen roll 1D's or even 2D's will risk RR pain.
Other than his big lads he has no advantage bare his blitz where his horns will give him 2D.
So try and setup your free players to get as many 2D's as possible as you will get lots of knockdowns and even 1D's for your team only have a 1 in 6 of a skull...so doing the 1D's LAST in your turn you could choose to risk these.
Use your frenzy troll slayers to try and surf his beastmen out over the sideline...setup a lad next then and blits with frenzy troll slayers to move his players off the pitch (assuming his cage is coming down a flank).
You have your troll slayers and blitzers who can move 5 squares...these are the guys who must cover breaks.
His beastmen are low av and easy to injure so hit them often.
If you want help, you probably need to provide a bit more details as to exactly what happened rather than all your players ended up on their bums.
Welcome to BB2, it is great fun and often the most frustrating game ever...as every move shows you the odds...you make the move...and then it fails...HOW CAN THAT BE....it can be becuase you dont remember the 5/6 83% chances that worked...just the 1 in 6 that didnt.
- You always want to have more strength than your opponent when you block, so that you will have two dice. Every ally that is next to the enemy, and NOT next to another enemy assits you with +1 strength. It may be easier to think, that only people who are in a -1 tackle zone can assist. The "Block" skill makes even one dice blocks less risky, since you'll have a 50/50 chance to knock a regular guy down. (
- Just because you have high armor and Thick Skulls doesn't mean you have to take unnecessary hits. If you put a guy next to an enemy that's standing up, you're giving him the first chance to strike. So whether on defence or offence, put your guys in the opponent's way, but not necessarily touching them, unless you want to tie that specific guy down.
The key to Dwarves is keeping your formation tight, and finding the weak spot where you can set up a good block. Once one guy in a formation falls, it often opens up another 2-die, then another, then another, and it will be hard to strike back from that position.
Oh yeah, and Dwarves have to score by running, so plan your touchdowns a couple of turns in advance.
