But Blood Bowl 3 will be coming out soon with the new 2020 rules so wait out for that.
1 you can play as a LAN and can actually like make every race in BB if you wanted too because in bb chaos edition you can easily manipulate the files and download your roster into the game we use to do this in OFL before we quit and changed to bb2. for a NFL style comp,
2. apart from the bugs like 12th man etc the game is actually pretty good, but to be honest bb2 is more a complete game, tho we cannot put any race into bb2 like we could in bb1 chaos edition graphics wise bb2 is far better.
3. I did like the way bb1 worked and that a LAN made u run any comp you wanted,
so for me BB1 was a better format with better admin tools for leagues.
as for bb2 i have found a way to kinda manipulate the files a bit to get the league we wanted but its far from what you can do in bb1 chaos edition
so if you like bb1 chaos edition for leagues its the best game for format and customization of your league for multi-player.

1) Can you play any race in single player or are you limited to humans ?
2) What's the single player experience like ?
I was having a good time yomping through the tournaments in Blood Bowl Chaos with my Orc team until my wages got to high for my tournament winnings to cover my salaries and I ran into an undead team with unbeatable buffs.

However, frankly speaking, you don't play BB for its singleplay, it's really dull and boring.
You learn much more from multiplayer, and even if there are chances you'll face a douche, you may also face a nice player.
Do remember that no players last forever, so don't get attached to your players, but to your team (which could be a reason why people are "shy" / "frustrated" to play in MP)
You can do the exact same thing in Eternal League.
