Chorfs have ST4 players that also have pretty good movement in Bull Centaurs. These guys make for great bullies (pun not intended)
Chorfs have access to Claw which is a must-have when facing fellow bash teams. This matters much more at higher TVs, which is where Chorfs shine brightest.
Chorfs have cheap pieces to foul with. Sometimes plain old hitting doesn't cut it, you need to be even more proactive in making your opponent suffer. This is where fouling comes in handy (plus having fouling options helps deter or remove Piling On pieces). Dorfs can foul, and I've met a decent amount who do, but hobgoblins are cheaper and less important to Chorfs than Longbeards are for Dorfs.
Dorfs are a solid team. Just need good positioning, get some Guard, some MB, a mobile tackle piece and they are an absolute pain to deal with. At lower TVs they probably perform a little better Chorfs thanks to starting skills and more av9. Once you reach mid-high TV Chorfs start gaining the advantage for the reasons I listed above.
Which is something i wouldn't say about dwarfs.
