the default gender is male
It doesnt mean anything that the default gender is male. You can sex change whenever you want in the game, the role of the cursed undead is a blank slate as is the main character in every souls game.
The player character has no impact on the lore of the world. The emerald heralds states shes there to help any undead who attempt to brave the horros of drangleic. She makes several mentions that you have made more progress than other undead, meaning there have been many before you.
It would be really neat to find out that she was made by the serpents.
There's concept art of a young emerald maiden along with her voice in the credits. If we ever get DLC for ds2 it will probably be about her origins since there seems to be so much unused stuff for her.
Anyways, I thought she gave the hero a choice at the end. And regardless, the life of a chosen undead is bull**** so it's not like they're manipulating you for malicious reasons. It's either let the world be consumed by dark or keep the fire going. It's a grim reality. The crestfallen guy even says the curse is linked to the soul, therefore the real curse is being alive in the first place.
No choice, beyond whether you want to finish the game or not. When you find yourself in the final room you have no means of escape, killing yourself returns you to the center of the room as do homeward effects.
Via Occam's Razor the simplest explanation is just that the Emerald Herald was created magically, and is not a "real human". Her eye colors and ability to level you up are proof that she isn't just a normal person. The Maiden in Black was also not human, and she has the same role.
