If it's of any consolation, he'll be back in NG+.
You can revive the guy who gets you into the Way of the Blue covenant after some time has passed.
So, Im assuming it might be the same for the blacksmith. Heck, I couldn't revive Way of the Blue dude after like 10 hours of game passed.
Beating the game.
It's something that happens autimatically. After about 10 hours ( or so it seemed like) I could the tombstone for the Way of the Blue npc popped up. It might take longer.
As for penalties... Well you'll lose the NPC as a merchant for a time, you'll need to pay to revive them every time you need their services and then there's the Much harder to clear sin. Ds2's Pardoner NPC only clears hostile status with npcs, he will not clear Sin from killing. That can only be lost by being slain by A Blue Sentinel.
Leaving/Warping elsewhere will Despawn the ghost, requiring you to again pay to revive the spirit of the NPC.
The Pardoner is an NPC found later in the game. By paying him in souls, you can clear hostile status with npcs. (Ie. If you attack Lenigrast and he gets up and starts fighting back, using the Pardoner instead of killing Lenigrast would reset him to being a shop without the negatives of killing him.)
Blue Sentinels (A PvP Covenant reachable relatively early in the game) are essentially the "Soul Police". Their job is to hunt down Sinners (players who kill Friendly Npcs and other players), and protect members of the Way of Blue Covenant who are wearing their Covenant rings from hostile invaders (Red Player Invaders).
You're kind of screwed I have to say, in your position I'd start over no question, second blacksmith is hidden and needs a late game item and he can add elemental/other attributes to your weapons as well as reinforcing. To get that item you're gonna have to rely entirely on summoning phantoms from now until really late game.
As the damage you're gonna deal is going to be abyssmally low and having to spend extra souls to revive them each time you want to use them will wear down on you. I'd say scrap your character and start over cause you can't be too far in without the key.
Seriously tho, the only NPCs you really can't get away with killing without increasing the difficulty of the game drastically are lenigrast and the emerald herald (as far as I know they're the only ones that are neccessary).
Beginning class really doesn't matter too much as you'll shift out of playing like it really quickly (a few hours or so you'll find some weapon you like more and add stats to other areas maybe), but if you want melee and the knight feels wrong try the warrior, if you want to try something else I'd say go with the cleric as you can heal and start with a pretty good weapon. Starting class just kind of gives you a head start in one area, knight is the least squishy, warrior the most slashy.
Sorceror might be the easiest if you don't mind not being able to use any good weapons for a while, though I really wouldn't recommend it because you should develop sheild/rolling/attacking rhythm early game as its harder to pick up than tossing spells.
