Yellow = average
Green = Good to sell (good deal), good to buy (very cheap)
When you're buying or selling items, green means you're getting a better price considering the average prices on other stations that you know of - yellow means it's about the same as average and red naturally means that the price is worse than the average.
TLDR - follow the green color when buying/selling ! :)

This would be ideal, but I can't find one, did it not make it in? The current system is ok for ad-hoc selling but you cant really organise a trade run without keeping records of each location's buy/sell rates.
I think it's on the wishlist and will be implemented as soon as LGM finish killing most gamebreaking bugs. Be patient and I'm sure you'll see it within a few weeks or so.
The overview panel can be found in the Starmap (M); there in the circular menu you'll find a tab for it. It gives you the buy/sell prices of commodities for the stations & planets you've already visited.

I'll have to start a trader playthrough soon too and check how trading has developed lately.
Would be nice if Tutorial had an info tab on this mechanic, or an elaboration of the colors on hover-over the colored price.
You're right, that would be nice.
Unfortunately this is one of the newest features and the Tutorials are a "bit" older already.
