I doubt they made a definite end themself. There is a set of wave tipes and with every round, a random type will be chosen with a modifier for health and damage based on the number of the current wave.
There will be an end, if the counter for the waves will be at an end. Which would depend on the number-type chosen in the program. Could be 255 as a classic limit for seemingly endless counters.

No wyvern tokens or medals from onslaught. Only prizes you get are from the initial prize selection, or monster typical mob drops. As for quests, if you mean like Complete 10 Waves of Onslaught or w/e, you need to complete 10 sets of 3 rounds.

to make it clear: a round has 3 waves. after every round you get your bonus from your picked category. the best ipwr for a map starts in round 8 iirc.

I should note that certain items show up as rewards.

Select pet eggs will sometimes give you a golden egg in higher rounds.
Select weapons will sometimes give special weapons like Maurader's Bow or Summoner's Grasp.
