The tiger is beatable, I got him at 59 (basically as soon as I unlocked him), but it took a lot of tries and getting used to his attacks. One thing to watch out for is when he reappears, he has an attack where he does a roar and if you're close to him you end up getting grabbed instantly.
He get easy later on too, I am at NG+2 and he is not even an issue.
Tip: Use Pluck of Many at start to build focus (if you have that talent) then use Immobilize to release Heavy Smash Attack at least 3 focus. Then followup by Wandering Wight spirit, then spam light attack.
Use Wind Tamer to disrupt his combos and spam Cloud Step to stagger
i have spellbinder but i didn't use that strategy. how does it work?

So challenging him and getting these Parries for invincibility frames correct will go a long way for later content.

go to 2nd last tier of spell binder skill tree that gives additional attack power based on the mana consumed.
You are banned from using any skills beside light and charged attacks.
kill it before your gourd runs out. As long as you can dodge about 80% of his attacks you should kill it very very quickly.
Also consider using the headgear that lets you dodge easier.
