I have probably been fighting this boss for 2-3 hours and I find him probably the most challenging boss so far and find it irritating how you can't escape the stupid "cutscene" blows, any tips would be appreciated

u cant dodge cutscene grab, but it only does like 1/3 dmg or so and only does it twice in the run.

Max your mana, def and four banes resistance then use spell binder, just dodge and dodge. Make sure to heal when you health is 1/2 or when the gourd can fill up your health, use it right away

As with all the bosses you have to learn his combos and timings and change accordingly.
But there are some tips.

Do not use "Pluck of many". If the boss turns golden and your monkeys are near him, they turn against you. You never want your spells turned against you.

There are only a few times when you can use Immobilize. Mostly when he's exhausted/staggered because most of the times he immediately turns golden when you immobilize him.

Keep your Focus points for when he's golden and exhausted some combos (not right after he turns). You have to learn how to dodge those combos for a while. But if you hit him with Heavy attack with full Focus when he's golden, he turns back and he's staggered for a while. That's the best time window to hit hard for a while.

I used Wandering Wight at the beginning and I thing later in the fight I earned enough QI to use him again. He does some nice damage.

if he goes golden, land a charge heavy. Prob need 2 focus points at least to shatter him in one blow. Cure shock whenever you can. He hits hard because shock melts your defense and makes you take a lot more dmg.

Trade charge heavies w him if you can, he has delays, but that can be his downfall because its easier to smash him and trade. You can even win these "trades" by going first and flinching him. Build up by either running towards him after he leaves, or just smashing him w light attack + landing perfect dodges.

investing in resolute counterflow until skyfall upgrade can be nice too. Parrying is quite effective against him.

You are prob level 45 at least, be sure to check the attack upgrade in foundation skill tree and the increase attack on perfect dodge in the transformation tree( magic spells has some nice passives).

Buff items will also help a lot.

I'm only using 3 focus charged attack the whole time, and he never turned golden, no immobilize.

While he is gold you dont actually need to attack him, he will eventually just get out of the gold phase by himself and you can avoid 90% of his attacks during gold by just strafing left and right at a distance of about 60% of the arena distance youre fighting him in.

When hes out of gold you can walk behind him and avoid a good number of his attacks just by being there.

I think that boss was about Stamina. was very difficult for me aswell. took me ages.
got into zen state, learned patterns and beat it.

It is possible to dodge the first cutscene blow with a perfectly timed cloud step.

Just set your sparks up right and be at least near level 60. It took me a few tries but then I got the rhythm of his move set. Make sure you have the best weapon and armor at that point. Good thing about this boss is that he pauses his strikes to gloat a lot. Leaving him open for more attacks.
