The Fan item should allow you to stunlock him long enough to break his shields.
The red beam attack in I guess phase 3 does alot of dmg in my fight it did about 80% of my health so I needed to be close to max HP to tank it, otherwise you need to dodge it or transform (then get ready to dodge the tiger).
1. His jumping spear attack, pay attention when he does it, his spear flashes a bit before he goes down, so that's the point where you can dodge. Similarly, his laser attack also has a similar tell, where his hand flashes for a moment before he uses it, so that's your time to dodge that.
2. His attack where he goes up in the air and starts throwing a bunch of swords at you can be deflected with the staff spin, that just leaves his red lightning attack afterwards which shouldn't kill you if you get hit (I'd suggest putting points in defense just to be certain).
3. Plantain Fan you get after chapter 5 is super useful, it just about breaks his whole defense bar, leaving him vulnerable to getting damaged.
4. After his defense is broken, a strong hit can stagger him, you can use immobilize at this time, this will let you get more hits off (you can also use staff spin while he's like this to build up qi to be able to use fan again sooner).
5. Azure Dust transformation (rock head dude) causes Erlang to stop attacking you so he can talk smack, you can still hit him while he's doing this, lets you have a bit of a breather.
6. If you want to get the most out of the fan, you can wear the golden armor set as well as use the nine skies drink which can restore some qi when you use it.
With the thousands flying sword you can block them with staff spinning, when he glows red then you use Cloud Step or prepare to dodge. Once you bring him down to 25% he will enter final phase and if you use Yellow Brow set you can now use the fan again and immediately beat him after the fan breaks his stance bar.
Yellow Brow set boost your attack to ridiculous level after you use Spirit Summon and if you crit you easily do half of any boss hp bar with a full 4 focus heavy.
Got to the next part and had to quit because I had work in the morning. Continue the game when I got home. Started me back at the Pagoda Temple. I'm thinking please don't tell me I have to fight Erlang again. Yep. I was so mad that I almost finished him off on my first run. On my 5th attempt, I just destroyed him.
I'm not gonna be that guy that now says "oh he's easy" because I've beaten him twice.
No he's not.
It's a game of memory, perfect dodges and your attack has to be done in a certain order.
Don't even waste immobilize on him. It's pointless except in the beginning and when he's at 20% health left. That's what I've noticed.
Golden armour for Qi build up. That soak that gives you Qi. I used iron pellet, laurel and tiger with the Supreme gourd. Buddha head, those crit beads and tiger for curios
1. Pop some tiger pills
2. lock on, run up and dodge the spear
3. dodge again 2 more times.
4. position him though so his back is facing the house or the rocks on either side.
5. Hit him w/the fan
5. charge heavy, when his shield breaks, hammer him. Then immobilize. Spin attack to build Qi, then hit again with charge heavy. Depending on the damage you've done. Boom. Next phase. and you still have full heath and gourd.
6. Dodge the hammer, roll back ( but be careful to not get hit ) hit him with azure dust. Then its a lot of dodging, crits in between his cooldown which is a small window. By then you should have your Qi built up. Hit him w/the fan again. Shield break/hammer and spin. try and get a heavy attack in if you can.
7. Dodge the yellow lasers. You can either spin block the swords, run forward or just use cloud step which is safer. When he lands and depending if you spec'd into cloud step. Charged heavy attack or wandering head.
8. Back to dodging, getting crits and by the you should have the fan back for one last run and he should be down to at least 20%
I know this all seems like nonsense but this is how I remember doing it. The fight is a blur.
I fought him so many times that when I finally beat him. I used 1 life saving pill to conserve gourd. And I only took 5 drinks. It's hard but you can do it.

I watched this guys video but didn't try his build. I learned that if I popped a couple of tiger pills and the enhancement one. I dealt enough damage to go into the next phase and that I didn't need to use spirit form. Basically saves you Qi if you get into a jam in the next phase.
It took me about 3 hours to beat him, but if you look online some people took more, others beat him in 10 attempts.
You can always search on Youtube for strategies and tips, plus seeing other people beat him should give you confidence that you can too!
