It's a few notches easier.
But if you expect it to be as easy as God Of War on easy/normal you might find yourself frustrated.
It is definitely soulslike. But not a soulsgame.
I haven't finished any soulgame and I finished Black Myth in 33 hours. With secret ending.
And I'm nearly 40 years old and my reaction isn't the yellow of the egg xD
I'd say, try it. If it gets too hard, find guids on youtube or grind some levels.
Learn the mechanics and you'll find yourself celebrating because you beat a difficult boss.
But if it's too intimidating, just watch some gameplay videos and enjoy them.
It's game and shouldn't be a burden
People keep comparing it as such, but it simply isn't. Combat is more akin to things like God of War or Jedi: Fallen Order. You get your weapon, you progress by unlocking skills and combos etc.
Combat is far more action-packed and fluid than in Souls, but obviously you do need to still pay attention to dodging and timing your counters. The general progression is completely different to a Souls game.
This game is quite linear, and is chapter based.
Overall it's definitely a lot easier than Souls games, but there are a few bosses that still provide a satisfying challenge.

Jedi, God of war, and even cuphead are all soulslike. So is ghost of tsushima
But they aren't soulsgames.

I just tried to mansplain that soulsgame and soulslike are two different categories.
To me it has really a LOT of unique, fast-paced boss battles and beautiful scenes, but is rather weak in map design and item variety.
Some boss fights could be quite difficult, but most are not.
The first playthrough is so cool, but NG+ games are not very fun cause there's not much left to explore.
Better watch more recorded gameplay and make your own decision.
To answer your question, OP, the difficulty doesn't seem to be on the level of various Souls games. Most seem to agree on that much, at least. As MxWu1337-bilibili mentioned, it's a few notches easier and it's a bit more balanced with regards to the bosses as they don't feel like you stumbled on a mid-level boss right out the gate...the challenge is more or less understanding the actions and movements of yourself and the opponent as the variety of attacks can make it tricky to understand when to dodge properly.
I'm not a huge Souls player but I think I'm managing well enough without using all the tools I could be using. I tend to learn and beat stuff with dodging, prediction and patience moreso than unleashing all the overpowered tools I have unlocked.
