That said here are some tips...
1. For the gourd thief move, if you keep your distance when you chug a potion, it won't trigger. The gourd thief moves requires you to be close enough for his immobilize to hit you and for him to NOT be actively attacking. So if you keep your distance you can usually drink your gourd safely.
2. You have no choice but to learn this guys attack patterns... He has so many delayed attacks that you can easily get some consistent staff spins in after each move he does then dodge, this will RAPIDLY charge your focus gauge to allow you to prep heavy focus attack.
Do NOT underestimate how fast staff spin can charge focus and how rapidly it comes out... It is a good move to hit him with after nearly every attack since it has no dodge delay.
Question. Should i equip the bull set helmet and armor for just extra defense? Do you think it will help?
I went full bull set with wukong arms & weapon for the extra crit & focus buildup.
Also if you have beat the secret boss of chapter 6 and got his spear weapon, that is INCREDIBLY strong and useful in conjunction with thrust stance.
Without the secret boss spear weapon, I recommend smash stance and make sure you are fully specced into staff spin, I underestimated that move for 75% of my playthrough.
Another thing I can recommend that helped me,
Equip as many mana boosting gear as you can, and fully spec into spellbinder...
Effectively this is the daoist spirit, the accessory that gives you a mana bonus, and see if you can afford to respec some points into the mana bonus skill and max it out...
If you have the needle, that is good to be used in conjunction with spellbinder (because of it's passives)
Finally for non bull gear, anything that increases focus gain or crit.
Then when you fight broken shell use needle and transformation first, then spellbinder after.

Would advise using spellbinder too, atleast for the second phase alongside crit/mana boosting curios.
Use spirit, vessel and transformation to blast through most of the first phase then spellbinder to finish.
What i did was going full Iron Bull armor plus ring of fire. Try to trigger second phase with minimal wasted mana and hp. Force heavy smash attack while in the ring while tanking his light combo (he can't stagger you with that armor ser).
Smash him a few times with full focus heavy attack. When you put him on low hp hit him with the fan to perma stagger him, rush to finish him.
Also a tip: remember you have a one use per fight of the resurrection medicine
I took a different approach, might work for you too.
Galeguard set upgraded to mythical at the Blacksmith gives you additional dodge i-frames and just massively boosts your perfect dodge bonuses while still providing good defense.
I found that counterintuitively it's best to be very aggressive, chaining Tiger's Acolyte into immobilize, getting off a level-4 heavy dodge-thrust, then going into Blacksmith transformation, parrying his flurry of attacks and doing a heavy punish afterwards.
As for the gourd steal, it's annoying, but I found I can tank it once as for some reason I ended up being healed every time he did it anyway.
I'd also advise to stay relatively close and get upgrades that let you continue the combo after dodging, he's easily staggered by the final hit of the light combo and it's a great way to build up meter for another level-4 dodge-thrust. Also, if he does his ring of fire, get out of there ASAP and lure him out instead.
