Always keep max distance from him, use Smash stance and charge your heavy attack to 3 focus points. Once near or at 3 focus points, sprint at him and trade. If you properly build your character you will be able to get the heavy attack off even if you receive some minor damage. You should have decent amount of damage reduction when performing these charged heavy attacks so the trade should be in your favor. Immediately after landing the hit run away. He will likely try to engage you so just dodge away and get distance between you and him. This will trigger his walk behavior where he will just watch you and does not engage unless you try to heal or use medicines. He might occasionally throw his weapon but you either dodge it or just start charging again.
You do not want to say close to him unless you know when and how to dodge those long combos and especially those charged heavy attacks. If you get the timing right, which is rather hard, you can use light attacks in between dodges early on and Resolute Counterflow one of his charged attacks but the rest must be dodged.
Staying away from him as much as possible and using charged heavy attacks is best way to deal with him in his 2nd phase of the final form.
But yeah as far as getting better and taking your time to learn his moves in second phase, using the wind tamer vessel, pluck of many, and yellow loong transformation helps a lot
He has the grab you are referring to that basically says, hey I kicked your ass, try again and do better.
He also can freeze you when you drink from your gourd. He then comes up to your immobilized self, steals your gourd, takes a swig from it (reducing gourd charges) and throws the gourd back in your hand.
If he pulls the gourd thief move on your, it doesn't heal him, it is just another way for him to taunt you...
Nope, he immobilizes you to do it, it's basically a cutscene attack that doesn't harm you and is just this dude taunting you...
He is actually a very memorable and well designed boss because of these things he does.
The one complaint I have about him is he has an insane amount of health to cut through...
However, every encounter can be different as there are rumours that the developer used some fancy AI/scripts to create different scenarios even in the same encounters.
You have to be at a certain range from him to immobilize you, and if you aren't you can drink the gourd without issue.
