The main character is a monkey. So ofc he can't talk and only does uh uh ih ih while dodging or getting hit.
Sun Wukong learned to speak during his journey.. we dont play Sun Wukong.. our monke also has to learn to speak.. maybe in the second game ? Who knows.
Story is about our monkey getting Wukongs relics to turn into the next Sun Wukong. If it's flat or not.. is everyones else own opinion. Some of the chapter end videos are amazingly done and tell their own story per chapter.
And yes this game has tons of unique bosses.. to many isnt possible if they are unique.. thats the game. Chapter 2,3,4,5 however are full with secrets inbetween bosses.
If this is "without much inbetween" then dark souls 3 also is just a boss game with some runbacks.
It's a good game. Not perfect.. but insanely good given by the fact that it's their first real game. These guys did more unique bosses than fromsoft within 4 games.

When this epic tutorial in the clouds started and i saw wukong i expected a deep, majestic voice... Not that "angry brat" voice.
But maybe its a taste question.
Thats true I also expected a different voice. Maybe they thought a talking monkey would sound like that.. who knows.. I suppose chinese dub sounds different.. I didnt try that yet.
But thats just a small nitpick since he isnt really in the game anymore after that.
Also this game was never made out to be some major storytelling game. Everything we had seen in terms of trailer/gameplay was insane visuals, combat and boss fights. If that's what you want, that's what you will get. Having other expectations outside of what was shown/told to us is only inviting disappointment.

Call me psychic but you don't have the right attitude, go check your streamers and ask them what game you should play, you clearly aren't ready to think for yourself yet.
Sun Wukong is portrayed as being irritable and in pain in practically every adaptation ever made. His golden headband is basically the equivalent of a shock collar that reigns him in every time he misbehaves.
I can't speak for the English dub as I haven't listened to it, but the Chinese voice is perfect...

Chinese voice sounds more masculine. I think I prefer that with subtitles.
I dont understnad that mentality. Are nintendo games not really good because japanese ppl buy the game? Is halo not really good because american buy the game? Whats up with that? Its a chinese game based on a novel written over 400 years ago that is an integral part of their culture, of course its going to be popular there, same as halo is probably more popular in america than in japan.
