I don't really understand how people are getting stuck on him this long.
I forget how much stuff there is before White Noble, but it might be worth checking this to see if there's any useful items you missed before him.
Beyond that maybe you need to change up your strategy in some way, do a different build.

And no not every boss is that "impossible" (it's not impossible). But if you're struggling against him that much, you're likely going to struggle even more on some in later chapters.

It is as grindy as your skill is. I've only played 16 hours & I am already on Chapter 5 of 6. The game doesn't actually require much grind, not like true souls titles
i use light kick to build up focus and jump backward smashing him when he spin toward me.
save all the HP mana and spells for the 2nd phase.
took me 3 hours to figure out how to save all my hp and mana for the 2nd phase
^ This is good advice. The snake forest is a good little mini grind spot in Chapter 1 for sure.
I was stuck on the White Clad noble for quite some time. You just have to persevere and grind if necessary. Definitely worth moving down the skill tree that lets you continue the light attack combo while dodging. The Wandering Wight ability is quite key on this.
Generally you can keep your distance to get a breather, but I found it easier to get in close enough to bait him into attacking and then countering and beating him down accordingly. Definitely utilize the fire wolf transformation, as well as the immobilize spell as often as possible.
Other than that it's just a matter of getting the muscle memory down for his moveset and dodging accordingly. It took me a while I admit, but I'm at the Tiger Vanguard in Chapter 2 now so hah.
Thanks, that's all I needed to know. I will shelf the game for now. Sadly I get a few hours a week to play tops, and I simply cannot afford to waste all this time on one boss, with all likelihood that I will get even more stuck down the line. At this rate I will complete the game in 2050 lol. If I was on PC, I would have used a trainer just to power through, but alas no such option on PS5 :D
After beating him, I had no problem with the next 3-4 bosses afterwards. So yeah, he's a brick wall, but once you break 'em down, the other bosses aren't to bad. But I'm only in the end of Chapter 2, and I've heard Chapter 3 is where it gets INSANELY difficult. But I guess the difficulty really just depends on the player. I myself am 35 and I take meds that really mess with my reaction times, but I cope by using caffeine to give me a kick.
When I'm locked in, I'm really kicking ass, but when I'm feeling groggy, I get my ass kicked, lol. Ya' know, good days and bad days.
The 'double donk' perk with smash stance, where you can chain two strong attacks in a combo, is nice to really lay on damage if you can start a light attack string, and don't hesitate to use the fire-staff transformation. Hell, don't be afraid to use everything. The snake boss you just beat can be used to poison him for some more chip damage.
You don't have to be crazy high level, I think I managed around 10-13? It's just a learning experience, and your 'baptism' to the rest of the game.
I remember before I respecced that I grinded some levels in little snakeforest zone a bit earlier until I was also about lv 20-22
Don't give up. Try to analyze the bosses if you're stuck on them and try to adapt with the skilltree. The game just lets you change it with zero cost anyway.
Meanwhile I am done with a NG+ run which was already so much easier because you learn so much from all the dying in the normal run. Fishboy went down 1st try in that run and it felt GREAT :D
It's rage enducing sometimes but when you finally get the f*cker down, it just feels nice!
