I don't even mean like a minute, 30 seconds, i mean 5 seconds of patience.. You literally came here crying about a boss, after seeing it the first time, getting like 3 hits in as you described it, and dying to it. Now you expect what exactly here in this post ?
The devs to notice ? And be like, omg hes right ! Nerf her ! (it's a she) Glue it to the ground.
If you just allow yourself to see the damn thing, you'll see it will open itself to hits.

Pillar stance heavy will give you a good range with high focus to get a nice hit in when he's hovering nearby but not so near to run up to in time. I expect you could counter his dashes with the pillar stance if you've upgraded it but I didn't try it.
When he's doing the claw attacks he doesn't move around much so get in there, the claws are pretty easy to dodge. Once you're getting hits in he falls to the ground quite quickly and leaves a big opening for piling on the heavy hits.
It only took two tries with the pillar.
Wind Tamer is a good trick. I'll try it next time I'm on a boss I need to stagger.
After my first fight, the boss wasn't as ridiculous. It was not hovering almost all the time.
And when I tried with the pillar stance, he was toast.
I did, that's how I saw my first fight was kind of an outlier. (He didn't behave normally.)

Thats why so many people are complaining about different bosses.
Sometimes the boss just decides to kill you.
It was very obvious to me in the cyan dragon where once he enchanted his blade when he had about 75% health left and beat me like a pinata.
In my best attempt i stunlocked and staggered it until it enchanted it sword at 25% hp.
A very good feature that ALL soulslike games should have
You need to take a step back and stop being so aggressive with your gameplay. He has clear openings and pauses for you to hit his head and tail. Combine that with your skills/talents and you should be able to beat this boss in a similar fashion. I have been using the thrust stance and find it much more useful than any of the other stances. If you would like tips or help you can ask for it instead of calling something so clearly amazing a bad boss fight.
You want to know what bad boss fights are? Practically every boss in Elden Ring. They have a huge issue with one shotting you ALL the way to level 60 vigor. Wow, level 60 vigor which equates to minimum of 60 levels without designating any other skillpoints? You can survive two entire hits now, congratulations!
