I think if you are talking about the water serpent, he has 2 phases - 2nd phase isn't much different from phase 1, just slightly more exaggerated combos/water dashes etc.
poke and run, and when he dashes in, just wait for it - Then, poke and run again.
Keep a good distance away because of his spammy water AOE nonsense - Consistently punish his easy-to-anticipate dash-attack then punish for a tiny combo. (Don't get greedy with super extended combos, he will punish you back.)
Spam your fire-demon transform as early as possible in both phases to get it back off CD for phase 2.
(EDIT: also, 60 sparks?!?! I was lv 18 when I fought him, how in the hell did you manage 60 sparks, this must be an exaggeration, lol.)
Something I forgot to mention, I had killed the Wight Ghost monk, (the creepy ball-headed baby demon from roughly the start of the forest area. That spirit grants innate defense, and I probably can't account for how much better defense my stats are by this point because I also buffed the spirit at least 2 times by this point. Also, using it in combat could easily net you a free stagger/stun into a quick combo, then into immobilize combo, another combo stagger for heavy half-heath dmg.)
If you skipped this dude, maybe go back and kill it, get some free defense stats and summon dmg/iframes when casted.
I set it to 1.8 (or something) and still nearly died (guess I've no skillz...)
But it made this otherwise impossible fight a good match for my assumedly crap game-twitch-reflexes.
Turn the multiplier back down to 'normal' afterwards and the game is fantastic IMO
If you really have that amount, just do what I am doing on tough or laggy bosses in C2 now: fully invest in Smash Stance and general Stance skills, then left branch of light strike skills tree, then all into Stamina&Dodge tree. When possible, use light attacks. If you think it's hard to strike or hard to avoid damage, stay away and charge until 3 points, then strike, get away and repeat. Work on timing to start your strike early enough to interrupt enemy's attacks.
Remember the game is all about charging your focus points and spending them with heavies, and the more focus you throw the more likely it is to stagger the boss for more damage. The smash stance heavy is the only one you can charge by moving as well and that's incredibly valuable when bosses move so quickly.
You don't need to finish the light combo every time, you're charging your spirit primarily, so don't overcommit. It only staggers at the end of the combo and that is a tall order in a game as fast as this one
Your dodge frame is extremely generous and mobile, not every dodge needs to be a perfect one. If there's an ability giving you trouble just swallow your pride and normal dodge it.
Invest heavily into the skills that give you focus for perfect dodges as you'll crank a few out playing this way.
