IF he hides outside of the arena (like he does to me), transform and make his ass come to you.
I was afraid of this boss when I read about him. But managed to kill him after a few attempts and I didn't even complete the drunken pig quest
It's worth going back and seeing if you missed some side/secret bosses, as that could get you some new items, and more levels. These may be helpful:

Also what Abyssal said. I didn't know that, but that would make it easier.
Changing up your equipped spirit and spells could help.
I personally feel taking a break can help too. I got stuck on three different chapter 2 bosses in three different directions one night. Tiger Vanguard, Stone Vanguard, and Black Loong. I took a break for a day or two and came back and beat them all in one sitting.
