Chapter 2 final boss...
I'm gonna assume this is where many people just give up. The difficulty spike is insane and this is coming from someone who finished elden ring DLC at NG+5. I used the wind tamer but his moves are just so insanely fast and I keep getting caught mid combo. Anything that will make this easier?

Maybe try exploring the map more or leveling up more?
It's not that difficult if you use all your spells and transformation.
You could avoid many attacks just by staying behind him.
And if you use the wind tamer in his second phase, he will be staggered for a while and his move will be similar to first phase.
Rock transformation might also be very useful since it's tanky as fxxk.

I'm at lvl 40 when fighting him, took me 2 tries with wind tamer.

I am part way through Chapter 3 and year he was the toughest boss for me. Although I beat him on my 3rd try.

Just get use to dodging at proper times and then also use the ability that lets you calling 5 copies of yourself that can attack him and also the move that freezes enemies to. Good luck!

He's quite easy if you craft the staff from Shingandang. Use Immobilise and Clone and you basically take half of his hp. The game is basically built around perfect dodge and see through counter, I haven't tried rock form but dodge and see through carried me through this fight. I finished the fight with half of the gourd and only used the Wind Tamer when he's nearly dead to see what it does. Definitely save the wind tamer for the right timing if you are struggling, don't be greedy. The Wandering Wight Spirit is very good here too. He's one of the easier boss that you can very consistently stagger and almost stunlock him. If you can, get the skill to do 2nd heavy attack after see through, that will 50% of the time enough to knock him down if you are aggressive.

Did you use summons for ER? Or bleed or Greatshield and spear?

He's not as hard as some ER bosses like Malenia or radahn, but roughly around margit, Rellana or Messmer.

He's harder than all base game ds3 bosses and easier than all ds3 dlc bosses

update your weapon at the Kindom of Sahali where you will find the necessary material before going to the final boss. Then it will be easy.

He already did. He has wind tamer. He probably used bleed, blasphemous blade, summons, or shield and spear for elden ring. Some of those builds are literally press L2 till the enemy dies. Elden ring is easier than a lot of baby games of you cheese it, hence all the cries of NG 7+ struggling in this game.

As I told someone in another thread.

go find the 6 buddah heads in the perilous lands. Go back to where you fought the stone vangaurd. There will be a new stone there. Click it and deliver the eyes from the buddah heads. Kill the boss and you will obtain the ability to craft a new weapon. Combine this weapon with the wandering wight spirit to give you 50 defense ontop of your armor's inherent defense. This will give you enough to survive pretty much anything in chapter 2 with relative ease.

suggest keeping distance and freezing him one or two times getting him low and his moves start to become predictable but he starts to go APE S**T but use your clones to cause damage on him and when he's less then 25% he starts to use the tornadoes and then you use the wind tamer! Try not to use all your heals in the beginning. Good luck! ONLY USE WIND TAMER WHEN HE USES HIS TORNADOES
