Hardest Boss list :
Erlang - Multi hit combos that guarantee him some damage regardless of perfect dodge, spell immunity, An instant grab move and Pluck is very weak here due to his movement and shield. High percent based HP damage. This boss undermines your entire kit, dodges your 4 focus, ignores spells, removes transforms, and his unavoidable damage. Pretty gross fight.

Great Sage's Broken Shell - Cannot be brute forced with pluck, similar to erland he has several lightning fast combos that even perfect dodges will have you take some damage from. Multi stage fight. Also a grab with basically 100ms of reaction needed if you don;t know pattern. His % damage is similar to Erlang, There is an argument that less HP and more def might actually be better here, After some testing you can defo take more hits the less hp you have if you have a specific amount of defence.

Scorpion - This boss cannot be brute forced with pluck , however, what makes him tough is his multi hit combo with a late wide AOE meaning he slightly undermines your kit, allowing him to hit you even after perfect or normal dodges, He also does some of the largest % based health damage in the game, Pluck however is strong here as is your regular spells, one of the primary issues is his spacing and engagement distance. Beatable but a time waster of a boss and horrible combos

Yellow Loong - This boss is entirely beatable but what makes him hard is how early you can reach him essentially at the start of chapter 4, making this boss rather formidable. He is fairly weak to pluck, and can be phased within a few seconds, his fast multi hit combo is actually not too dissimilar to erlangs speed the main difference is the he lacks a shield and does less % HP, whilst also, have a significantly more telegraphed move set, he also doesnt get the privilege of hitting you on the tail of perfect dodges or normal dodges.

Conclusion, All the other bosses were much more beatable , you could either brute force them with pluck, or their movesets are not designed to undermine your kit, or ignore your spells, or hit you after your perfect dodge or are easily staggered.

I refuse to believe Erlang and broken shell are balanced

They technically are not.
They art deliberately designed to undermine your entire kit and make you win based on pattern knowledge, perfect dodges and a fair bit of luck with his choice of moves.

If you get his wombo combo several times in a row, just restart and youll likely get his "i stand still a few times now and then instead of wombo over and over" and youll beat him.

They are fairly obnoxious fights to be honest.

I personally had more trouble with hundred eyes Daoist master, also pretty much all the grab attacks in this game are hilariously instant without warning xD

I think its because of simply how early you meet him and how under levelled you can be. his moveset is not too obnoxious but his rapid combos of which even if you perfect dodge all the hits you can STILL get touched by the aoe at the end if you didnt have room.

clearly this is the real homage to FromSoft. I have had flash backs to DS2 with low ADP levels with some of grabs... clearly dodging out of the path of collision with the hitbox and then you teleport into their hand, foot, weapon and get launched....

I never really struggled with any boss until black loong...that move he does where he slams his hammers into the ground is almost impossible to dodge them all even rolling side to side (not forward and backwards*

The boss I had the most trouble was the Tiger in Act 2.... I died over 15 times.

Any other boss never took more than 3 tries.
Am in chapter 5 and just fought the yingyang koi fish

Tower stance or just standing on one of the rocks there.

While I don't have much to add to this conversation, I found your observations to be interesting and aligned with my thoughts too.
