If you haven't played them, not sure why you care. If you like super custom characters and deep dialog go play BG3. I know I loved that game too.

I personally like this game a lot, partly because it is based on Journey to the West, a branch of oriental myth that I have always been fascinated by, and I am very happy to finally be able to play as The Monkey King in a high quality fantasy action adventure game.
I think the graphics are insanely good, I love the combat so far, I think the bosses are epic, albeit quite challenging sometimes, so it feels good to best them in combat.
I might be partial because I have an extremely well cultivated love for Chinese myth in particular and Chinese fantasy themes, but this game is genuinely good imo.
If the majority of positive reviews stem from people who just thinks they are giving DEI culture the finger, I will literally puke blood from my eye-sockets, because that is genuinely insanely stupid and beyond insipid.
I truly do believe though, that people love this game because it is very good. It is indeed scratching an itch. It is quasi souls formulaic, and takes inspiration in the right way, like many other surprisingly very good games that have come out lately, like Jedi: Fallen Order, Stellar Blade and Lies of P.
These games took many of us by surprise, because most of us thought that only one singular developer could really soothe a very particular ache we all have as gamers, but that is no longer the case, and we are all glad for it, I think. I hope.
That being said, this game is probably successful (and going off some Chinese people I've asked) because it's basically China's first AAA game AND a popular "IP" that everyone there knows. All those things given basically means a huge majority of Chinese people are going to play it and review it. China is also very well known for review bombing (positive and negative) so it's not surprising that this game has a crap ton of positive reviews.
Is it the best souls game ever? Really depends on what you're looking for with a souls game. After having played many in my life I'd say this is definitely up there. For presentation it's probably the top, since it definitely takes away it's visuals and compositing from character action games.

Large variety of unique enemies and bosses
Loot feels exciting and rewarding to get.
Large variety of skills spells and mechanics.
Not too easy and not too hard, just right. Gives you a fun challenge
Playing a famous character(monkey king wukong) from Chinese folklore that inspired things like goku from dragonballz
