In terms of difficulty I would rated it easier than the majority of souls likes games...
However starting out is SUPER rough because of your lack of levels.
Unlike souls games there is no punishment for death apart from being sent back to the last checkpoint (usually not that far away), so it is more forgiving in that respect.
If you are a veteran of any Fromsoft souls like game you will find this easy (or easier). If you have never had to face a challenging opponent and battle them repeatedly to overcome them you may find it hard to begin with.
Although you cannot put the game in easy mode you can tackle the easy mobs repeatedly to level up and then retry the area or boss you are stuck on again. There appears to be no penalty for dying. Also the timing required to dodge or parry is extremely forgiving and effective. It makes you feel really powerful and skilled whereas in Elden Ring you miss time a dodge or parry by a millisecond and you are heavily punished.
The combat is great though but it does take a bit to adapt, at least for me it has
Yeah it is definitely NOT a button mashing exploration game so you probably made the right choice there. Despite claims to the contrary, it is a souls-like with souls-like difficulty
Otherwise it not insane hard once you learn the combos, im slowely plowing through chapter 2.
