I know there's mixed opinions about this, but for me, difficulty settings ruins the game. The game should be played in the dificulty level determined by the devs.
For me, the smartest way to change the difficulty is within the game itself (not before you start playing). A good example is when you are "dying" a lot to a boss, the game identifies this and can trigger something that helps the player, like an NPC that can appear to help, etc. I liked a user's tip that if a player is being very skilled when facing a boss, this boss triggers a more difficult phase 2. There are countless ways, but the game must reward the more skilled players.
The best way to change difficulty level for me is the one used in Elden Ring, where if you explore and complete all the optional dungeons in your way, you acquire many items (better weapons/armor and estus flasks for ex) and levels, which ends up making the main path very easy. Otherwise, if you only follow the main path, the game can become very hard.
