How does the game decide if match will be canceled or not when someone left the game?
Sometimes it's obvious like your match just started and someone immediately left, but sometimes it's so weird like you've already played 1 minute or something, caught the point and match gets canceled i don't get it

there is a timer and if you are AFK you are kicked out of the game, if this happens at the start of the game, the game will be canceled (if ranked) and you will have a priority queue

do you know more specific information? like how much time needs to game won't be canceled

the AFK timer is 45 seconds and the match can be cancel untill 1 minute after it start, keep in mind that you would be banned from competitive queue if you leave too many games
