2: Parry can be different, there is parry/block, and there is perfect parry/counter attack.
i: parry/block: is when you block an enemy's attack, according to what you said above you may know how to parry/block attacks, but i will say it just incase, light attack and press the same direction the attack coming from ( for example: enemy infront of you attacking, press forward and light attack, this will block it)
ii: perfect parry/counter attack: is when you parry an attack before it hits you at a certain percise time. just BEFORE it hits you, won't happen always but each enemy have certain attack that can be counter attacked. few enemies can't be blocked, orange attacks for example the UG's that fight you with orange attack such as wire coming out of them plugged into your body, this will get you into a QTE ( quick time event ) or whatever you want to call it, will want you to shake stick ( since you're using controller, or use WASD if using keyboard) to let it go and block it. As for cyborg beast boss, i guess you mean the ones with Stun sword that hits with yellow attacks, these will need to be either parry or counter attack, they can also parry your attack or counter it, but ofc won't insta kill you as if you counter attack them. still can be blocked if you learned the parry as i mentioned above on how to.
3: BP: let's say the currancy you will use, or the money that you gain through missions of mainstory or through VR missions. the upgrade menu is accessable through either main menu after you finish the mission FILE-00 2nd mission it will be Enabled. if you want it from main menu then load your save data then choose story, last option will be costumize, 2nd way to do so is after each FILE you complete you will be asked if you want to costumize Raiden, yes/no. and you can or can't up to you.
4: it is related to 1st question you asked about slow motion, the Japaense word is Zendatsu once again, whenever you see your screen turning blue and saw a Japanese word on the right side of your screen, just use Blade mode and you can activate zendatsu.
Last thing to say as an advice, go on easy for now, and use assist mode, this will let you get carried also will teach you a bit about parry. you can get the hang of the game combat system as well and gain some BP to upgrade and such and get better progress than frustration on normal if you're not familiar with game basics.

For one, unless you are really, truly, flailing (and if you beat blade wolf by any means you're probably not quite at that point) I wouldn't recommend dropping to easy. I also had a great deal of trouble with the first areas and boss. But once the combat "clicked" my performance improved dramatically and I almost never died outside boss fights.
Check out the VR missions. Some are more tutorials that help you learn about the core mechanics. Most vitally, the Zandatsu tutorial is in there; which really should have been more obvious, given that it's a core mechanic and your primary health source. This also explains the moon rune QTE's. Some of the earlier (less insane) challenges are also great as a place to get the hang of the game without it shouting at you to make progress.
Also a note on parries: in general, parry toward the enemy, not the attack. So if, say, one of the Gekkos (I think the things you're calling cows, on account of how they make cow noises) is winding up a roundhouse kick, you want to aim your parry at its body, not the foot. Also, an attack that makes an enemy glow yellow is unblockable, and must be dodged, red and orange can be parried.
Speaking of dodging, the main dodge move, "defensive offense" is also hidden, and must be purchased under "skill" in the customize menu. Get that, it's PRETTY USEFUL.
The game's combat takes a bit of work to learn but it feels really good once you do, good luck and have fun!
