In general, use Defensive Offense for the yellow attack. Excelsus may sometimes do the yellow attack differently, where instead of tracking you as it brings the heat blades down, it freezes them in the air to slam them down way quicker, so watch your timing.
For the normal vertical swings just run, preferably to the side opposite of the arm it's swinging, and without ever getting too close to the edges of the area, otherwise you'll lock yourself in between the next blade attack, and the corner.
For the attack where it slides its blades across the area, jump whenever it does it with just one blade, and Ninja Run at it when it does it with both; Raiden will jump through. You have to have some distance when starting to run in order for it to work, so be careful.
For the plasma lasers it's the same as usual. Run around without going to the corners of the area unless it's to evade them - and once you've evaded, run right back to the middle. The Gekkos will get taken out on their own. If you're bold enough, you can wait until one of them gets hit by the lasers, then go for a Zandatsu on them before they explode. Works wonders on harder difficulties.
When it tries to stomp on you, preferably run away. You can stand still on a convenient area (that allows you a good amount of space to run away) for a bit to bait it into stomping there first, otherwise it'll quickly eat up the amount of ground you have. Defensive Offense works well here too.
For red attacks it's worth mentioning that if you're completely sure you'll be hit, you can try to parry to decrease the damage. Parrying Excelsus will get you damaged, though I would imagine it gets you less damage than if you took the hit in full. Didn't check on this one, though.
You'll get the prompts to activate cutscene attacks after bringing its HP down to certain amounts.
