well a workaround is just to drive away from the minefield and come back
I also happened to roll onto a mine, but the game didn't glitch out. I guess it's kind of a rare occurrence?
You discover minefields either by driving close to one or by driving buggy with dog (he starts to bark in the general direction of minefield once you come close enough). Every region says how many minefields there are on the map (as other objectives such as enemy camps or scarecrows).
There are usually 2 minefields per region (2 with only 1). Every minefield has exactly 3 mines. You can either disarm them or blow them up to clear minefield.

You do realize that minefields do not automatically show up on your map right? You actually have to find them, either by accidentally blowing yourself up, or by driving by one and having it get tagged on your map.
