The DLC for the first game is pretty much mandatory if you care about story.
Castlevania Lords of Shadow: Mirror of Fate HD is the "third game" being referred to. It takes place between the first and the second games, and exists as an origin story to one of the important characters in Lords of Shadow 2.
If you own the entire seties, you should play Lords of Shadow 1, Mirror of Fate, then Lords of Shadow 2.
If you don't own Mirror of Fate, it's not a huge deal. There's a long exposition dump in Lords of Shadow 2 that tells you the entire plot of Mirror of Fate outright. I wouldn't reccomend skipping MoF, though. Experiencing the story is better than having it dumped onto you out of nowhere.

Erm...what? I don't know that you're quite up on Castlevania history. The franchise actually remained pretty consistent under IGA's rule. His last game, Order of Ecclesia, is still rated higher than Lords of Shadow 2, a game so subpar it basically killed the franchise. Though that's mostly because Enric Álvarez developed a massive ego for some reason.
If by "Authenticity and grace" you mean "drops most of what made Castlevania great in favor of a grimdark God of War clone."
