Unreal 4 is indeed being used, and its already been heavily modified to fit what they want from it.
Some features mentionned in is possible to do if not added then it is just a question of mod to make it possible. Unreal engine have more modding capabilities than Ogre but you can see there are a lot of mods and new ones also being made in a good rate.
I personally would like some kind of thirst, temperature system similar what Project zomboid have but the stamina is not really a great concept in video games because Kenshi is a mass combat team based style game where a stamina system would just limit the options in fight (both ai and human player aswell) which would mean your character often needs to take rest. I think that a thirst system to the hunger system would be the same just you need to watch 2 stat instead of one so it is doable.
Mount system is also tested by some mod in Kenshi 1 but in Kenshi 2 it could be added a a mod because if someone know how to code and have some in the team to make animations then it is a doable feature.
I personally would like to see bows, throwing weapons and simple guns in the game since these cannot mess the core gameplay that much. More facial animations - expressions also would be a nice addition since cloth physics mentionned and the models also rigged animated in a way where they could apply facial animations.
Maybe they could add young people so it will be more immersive if there are childrens in the game too (possible as a mod).
What I really want is a better economy and better settlement management system where you can recruit npcs too as citizens of your own settlement and members of your faction. That would be handy so you do not need always caretaking to happen in your base something so you can give simple orders like guard, farm, collect, chop wood, build or repair.
If nothing above will be added still no worry because they can make some code what can serve as the baseline of these features so in few month or year after the release we can get these fancy features. Maybe I would learn to code to that day so I could contribute more to the project.
