Best way to train strength is to carry a heavy load while carrying a persons body around and just go hiking. Its tedious but it is THE fastest way in an un modded game to train strength. Up shot is you get to train all your other combat stats at the same time whenever you fight with bandits and animals.
Using hacker and Heavy type weapons also trains Strength during combat.
Even though I said its tedious it takes very little time to get your strength up to ~30 if maximise the strength from walking % (which is 35 i believe). at around 30 Strength with good enough athlestics you can wear full plate armor and still be able to run with lightweight weapons and no encumbrance from inventory. The armor itself will reduce your speed and combat stats by alot but you still will be able to run.
Or you could just edit your stats.
Personally I would consider both the mod and editing stats (oviosly) to be a form of cheating as they are no risk means of advancing your units. But thats just my opinion, and its a singleplayer game so do whatever you like.
Just prepare to be shunned for takign the easy way out hehehe.
there are three levels to training dummies. each upgrade lets you skill up 5 more points. untill max of 15 is reached.
and it can be extreamly slow getting to lvl 15 on a training dummy.
as for overloading yourself, that is how you train strength, and the best way to do it.

First, go to a town like Brink where Samurai are walking around in circles in town.
Then load up your man and or woman with the heavy stuff, hitch a character onto his and or her back, mouse over a samurai, and hit that follow button. Bing Bang Bong. Hit 3x speed and walk away from your monitor.
Exploit? Maybe.. Ehh, I like to think of it as a time saver. Load up 6 or 7 guys/gals and have them all follow some samurai for however long you wish to leave your computer on. You don't have to watch over them for safety, you don't have to keep clicking to make sure they stay in motion, and you don't need to be present for them to gain their strength.
Orrr you could actually play the game do it for yourself in half the time.
Ill stick to my method since it lets me train everything simultaneously :P
Theres a reason one of my medics has a first aid skill of 105... Im not really sure how but he does.
