Install mods to address whatever is annoying you about the game. You want some things easier, some things harder? You'll find individual mods for it.

The big all in one mods will almost definitely screw your game.
If you still want to try a big ole splodge of something, look at collections:

These are basically lists of mods, in load order and usually with a mod list file. You're usually safe to pick and choose from a list (allowing for dependent mods) so long as you keep the same load order.
this comes w/ its own caveats too. i used to run a 200+ list before any total conversions were out, and it can be even more of a pain than the bloat/over saturation/jank that comes w/ the bigger conversions. i've found the best route is a balance of both. letting the conversion take care of a big chunk while piece mealing any particulars as you see fit... assuming you even find a conversion you like (though there are some that keep close to vanilla).
it should be noted that if you go that route you'll need to really read what's in the bigger mods, as there are a lot of smaller QoL mods already applied to the bigger ones.
and well within their right, it's a massive project.

Genesis is bad in almost every aspect, UWE is a much more thought out project.
UWE Is a bit too much IMO.
Some of the things that are added in UWE are cool, like the weapons and new items, but for me it adds a lot of innecesary things, like the races.
Shek subraces... ok. Hiver Skeletons... mmmh maybe ok? I don't love it. ♥♥♥♥♥♥♥ Argonians from skyrim??? WTF
