I have no issues with the UI. The font size can also be increased in the options, it was a little too small for my liking right after the update.
As a side note, today Chris added a beta branch for the old stable build 1.0.55, so if you don't want to disable the UI mod you could opt in to that to revert for now. :)
So you'll just be missing a couple bug fixes, one of which is likely the cause of your problem right now.

one of the layouts - possibly ( Kenshi_ItemListItem.layout ) but would need some trial and error - warning some parts are used multiple areas with different sizes/scaling so textures and stuff can look stretched if they aren't pixel neutral. solid colour like dark ui shouldn't suffer from this.

also be sure that its just not the 600x800 wrong res bug - ie if your screenshots aren't at native then neither is your display. ALT + Ent in-game once at start of session resolves this if it loads wrong initially.
