Also'd suggest a mod to unlock Edge 3 and Meitou production (A smithing mod to unlock all the ingame tiers)
My personal favorite is Recruitable prisoners for it's coverage of all vanilla game NPCs. Which you must persuade to make them join you if you're into expanding via dividing and conquering :3

Fixing Clipping Issues, In-Game Biome Map (No Colour), Hachigane for Shek, Crab Armor Icon Fix, More Plastic Surgeons, 256 Recruitment Limit, More Names!, Let's Talk, and Racial Diversity (Formerly Multirace Bandits).
All of which add no new content to the game, besides names. And it took me 150-200 hours before downloaded my first mod. So no, you don't need mods at all.
Because food size shouldn't be an inventory pressure as well as a consumption stress. The improved version AFAIC is "All food is a cube" or something like that.
Ummm, not a "must", it depends on play style, and what you want out of the game.
The only one mod I find as a must have, after A LOT of hours is "Don't eat the bread", I use it on every playthrough.
Bread is for recipes, it's long to make, tiresome, and your people do not understand that it's a ingredient not a bread sandwich. People eating the bread before you make real food with it is very very annoying, counter productive and even possibly cause of ruin and death, for no reason except the dev overlooked the bread mechanism.
"Don't eat the bread" is the only mod that no one would ever dream of saying it's useful because of personal taste.
the cubic foodcube is close to a must have mod, but non cubic cubes can not hurt you, so I say it's not a must have, it's nice though.

But since you are a newbee, you 'll struggle and eating bread you steal may save you from death, so even the bread mod can be questioned for you.
The real answer to your question is a must have mod is a mod that allows you to play vanilla kenshi.
people do what they want with their squad size, if chris hunt reduced to 30 it's either for balance or engine limitations, and I have no idea which one it is.
fewer people makes for tighter games, larger population makes for easier runs, but again things are never simple, when you run large squads, you lose more people because you treat your peeps like numbered assets not like characters.
Kenshi vanilla is 30 peeps, kenshi is ment for 30 peeps, the numbers affect player experience. I have no prerogative on deciding what chris did is better, worse, downgraded, or not. kenshi 1.0 is 30, that's all I know , and what I judge as standard. thus pop 256 is an alteration, good or bad, but not a must have.

Now a huge chunk of my settlement are reformed starving bandits or dust bandits, with a couple of ninjas and even two Paladins and a holy servant in there.

If you're still early game, i'd recommend the "prisoner cages NOW!" mod for this though. Spending an in-game week speed-rushing tech level 3 just so i can put this prisoner into a cage was NOT fun. Eventually it got to a point where i found a mining camp, put the starving bandit into a cage there, and quickly recruited and then freed them before the both of us booked it to lay low for a few days, as the bandit now counted as an escaped slave, and i was wanted for jailbreaking.

If you're going Holy Nation at all, Okran's Rest might be a good one too, just adds another city to the game, has a good armor shop.

if you want purely cosmetic stuff, "Travelling, talking citizens" is good for just adding more life to the game. every so often you'll encounter a wandering group of other people and can eavesdrop on their conversations.

Dark UI , slavery pays more , cambial hunting job , shop economy revised or traders have more money, Camping Extended , Weapons Mod Dissemination ,
Mechanically inconsequential mods , simply give you balanced activities to do.
Optional Non-Vanilla
Faster Healing/Faster beds - reason being you spend too much time in a coma or hurt , if you ever feel faster healing breaks the game simply don't engage in combat.
I do not recommend any "world Expansions" usually the make enemies thougher , I just installed all in one "wasteland expansion" and it has primal creatures that destroy vanilla squads solo.
If you're ever having "loading" problems , which kenshi does have
Remove Weather effects
and Compressed textures
as well less foliage will speed up your load times
besides on holiday that most of us are, i still think it's needed as even a bigger squad in kenshi won't make it easy'er for some types of ai, that and anything over 40 is hard to keep with you
