Would i still need to build various workbenches then? whats if one house cant fit in all the stuff, i would need research table and whole bunch stuff just to be able to craft a bandana or something.
You need to build crafting benches to craft anything, and depending on the size of the house and how many benches you need, you may need multiple houses. I know from personal experience that a snailhouse can fit every crafting bench in the vanilla game, including a research bench, with enough room left over for storage but not much else.
It's also worth noting that you can't produce iron plates or steel bars in an NPC town because the machinery for that needs to be built outside, so you need to buy the materials when crafting anything with iron or steel in a a purchased house.

and you can do most anything like you would in a regular base except anything that's outdoors only. unless the roof of the building is big enough.
If you get the moisture farming, a really strong start is to get a wheat hydro farm going to make grog. There is a farm shop and bakery so you can also buy wheat to make grog early on while everything is getting set up.
like taxes, or holy nation preachers? can i still attract visitors with a shop storage inside a settlement?
-You don't NEED a base to progress. A weaponsmith doesn't *have* to stay at the base and nor does everybody else.
-Base raids are more of an... Option in kenshi. Not a requirement. You can quite literally build as many walls/gates as you like and you will never be raided, Or rather they can continue to break stuff day in and day out and never make it to the people inside.
I personally live in the fog islands and i have such a massively complex(Multi sectored) base that encompasses the fog below and the hills above that when fogmen raid me, or coast raid's come or triangle bandits or cannibals come, They literally sit at one of the gates somewhere. They don't a find a way in or try to because 1: The line of sight is blocked so they don't see anyone, and 2: There's more walls beyond that first wall so they get kinda confused. My core has *never* been breached legitimately.
You can Craft everything you need for "Gear" in a purchased house in a Town with the exception of items that require Metal Plates or Steel Rods. You can buy those at various supply shops and at Waystations. (You can't grow plants for Cloth, but you can use raw hemp/cotton in a loom in a town to make it.)
Food growing can be done, too, but you'll have to buy Water from an appropriate Shop as you can't build a Well in a Town and none of the existing ones, AFAIK, actually "work" to produce Water. You would need to be able to supply enough power to those Hydroponics, though, and that could be difficult to do in some Towns due to limited housing/roofs.
There are mods that add features to allow you to do everything in a faction Town, if you wish. However, one issue that always comes up is that you can not keep some NPC Guards from detecting illegal operations like crafting Drugs and Prisoners don't "see" the locked doors of your owned house as blocking them from escaping if they get free from their cage.
I use a number of mods to make living in a town possible. I actually enjoy setting up in a town most of the time.
I can craft iron plates and steel bars on small crafting stations. I use a moisture mod that draws water from the air for desert living and earlier hydroponics mod to get started farming quicker. I use a geothermal power mod for providing power in towns with no wind (also helps with hydroponic power requirements). I have a number of QoL mods as well that help with town living. I initially set up to use the Hub as my base but have since moved east to Stoat in the last 2 game saves. I usually ally with the UC so being in the great desert suits me.
