hold shift, right click on mine, select job. that wills et it as a permanent job.then once its full they will haul it off if you have proper storage for it.

You need to have enough space in your inventory for one unit of ore

I believe you need to have a specific "Copper Storage" built. A regular chest won't work for automation in my experience. Maybe that is the cause?

Research storage and look for it in the storage building tab.

First, try to put storage box (Storage: Copper) right next to the mine - this way, you can check if your character is bugged or something else bad happened like pathfinding problems.

Indeed, if your copper storage is too far the worker may not 'see' it when he comes to the copper mine. A way to check this is to shift-right click storage and go to mine, the job for storage should become 'blank' when you're out of range.

One of ways to circumvent it is to build similar storage box right next to the mine. After checking that your worker correctly hauls the copper to nearest copper storage box, remove storage job to this box from orders and shift-right click your original farthest ore box.
You just have to let that empty storage sit near the mine, the worker should ignore it as he has a hauling job for another storage, not this one
Sorry, can't check it myself now but it may work, I saw something like that in a video where player made a mining base out of town but hauled water and steel plates to the house in town, all on auto.

I always put storage inside buildings cuz outside ground isn't flat as the floor for pathway. There's limit range between storage and ore node for auto hauling, around largest city size from end to end. When you build storage, be sure it's accessible, nothing in the way.
