However in this case you could probably just edit the requirement for limb loss in FCS. For example editing the required -100 damage to a smaller number. This way you could purposedly to go ingame, get hit and hope it is the right limb that gets destroyed.
You could save/load until you get the results you want and then disable the mod.
I'm not sure is this kind of editing possible yet, but this is the best I can come up with. Maybe someone has a better solution. :)
1. Wear some high end gear that protects the rest of the body, but with minimal protection of the limbs you want to lose. Holy Chestplate and Chain Shirts work well. And grab the best helmet you can.
2. Then find some bandits with crossbows, kill all the melee bandits then put your character on hold.
3. Once only the ranged ones are attacking you, just let them keep firing until the limb(s) you want to lose pop off. If you got a good enough armour, the bolts should do no damage to the protected body parts.
