Even in a town don't expect to see a ton of business. I don't think the system for that is working as intended. Even when it does work as intended it wont be enough to make a shop counter your primary income source.
Kenshi certainly does do a ton of things, and does its best to make as many ways to play as viable as the world will let them be. But the game just can't do everything for everyone. But the developers seem to have tried their best to make as many different ways to play viable as they can, like I said before.
Because it's not possible.
Even modding it you wouldnt be able to.
Best you can do is setup a shop counter and fill it with drinks.
Thats about as close as you can get.
Maybe a Kenshi 2 or whatever game Lo-Fi bleses the world with next will have an engine capable of more diverse things. Remember this game originall came out on steam in....2013? And I don't think they ever updated the engine because that would of meant remaking the entire game I believes.
can you just imagine Kenshi built on the UnReal engine? er mer gerd that would be the shizzle fo rizzle.
Most likely for the reason you mentioned. On a better engine that can support his full ideas he has for the game.
But is it possible now?
There is a situation called the bartender that you can start off as which would make this seem possible.
The closest you can get to a bar is build some tables and stools ( enough that there are empty seats after your inactive workers sit down)
Maybe stick a shop counter in there with cheap food as medical supplies.
Wanderers / traders etc will come and sit/buy goods there.
