Just make sure you mark your town (if walled off) and shop building as public so they can get in.
Sorry was playing when I posted, if you have your town completely walled off with only a gate for entrance make sure you set the gate as public as well as leaving it open when you want traders to stop by.
Ohh good idea..never would have thought to do that.
I built a small shack outside the wall, open to public with open doors, and the shop counter inside.
This is what I stocked in shops when I built them and the Counters remain untouched by NPCs across the whole of the map.

Save is from the experimental branch with no modifications being used.
EDIT: I get the same result by using an outpost style Shop Counter in positions/locations that *should* have buisness of some sort.
so I stick to "scheduled" trading hauls.
pack a bull or two with decent stuff, assign a guard and let it roll out.
I leave with goods, and come back with recruits, blueprints, books and usually a little battle experience on the side.
Btw all weapons was made by my faction, no looted items at all, and the weapon quality is pretty good. Thats kinda sad, so much time wasted for this. :)
Weapons and armour will never be bought by any NPC. If you want to sell them you have to take them to the shops directly. Which makes enough sense, random civilians nor mechants will have the need nor money for very high quality gear.
