In there you can find a trove of useful information.

Get a seal that you like and spend rolls trying to synergize. Try not to spend levels on defense, maybe 1-3 total. Stuff like time stop can feel nice, but if you invest points, then you get stuck in a "dude where's my damage" situation with no means to finish the bosses. That said, the Highlander's HP regen sign is pretty decent and makes for very forgiving runs on +0 Difficulty, but you have to build hard offense and will have no starting point to choose how. (This is the last character and the Sign has an unlock condition too)
Don't use guides people.

Not necessarily true.
Guides help you understand the mechanics much better and with that understanding you can create goals for yourself. I'd personally rather read a guide, try few of the top builds and once I experience the wining mechanics start playing around those builds.
As for it being a grind, everything is a grind.
The only reason you don't feel it is because of the fun factor which is unique to every individual person.
I have 5 on knight and fire mage due to Demo item cube giving me +3
So each run I will definitely get 2 out of 3 gods I desire.
Even this isn't correct.
You can have 3 gods, as well the Fates. And the Fates give really good stuff, so don't reroll them.
Things like this should be explained in game, tbh, either via a short tutorial on gods like when you first get a power, or via a small codex that explains the more abstract concepts.
Another thing: you have a certain chance to get new powers after you've picked 3, an attack, and a dash. (That's my best guess so far - I haven't stress tested this but it seems pretty consistent.)
So if you want all the powers, you need to get items with new skill offer chance. If you want to focus in on specific powers harder, go for skill level up / rarity upgrade chances.
