I'll have to investigate this a bit. I'll get back to you when I can.
I have a Xfi Extreme Gamer, also configured as 5.1 and only get Stereo. Would be great if the game could get 5.1 sound, but I can also live with only stereo.
On my system, I actually get two pulseaudio playback streams for SW, even though the corresponding output device is 5.1 and /etc/openal/alsoft.conf is explicitly configured for 5.1 ("channels=surround51"):

1. "ALSA plugin-in [ShadowWarrior.bin.x86]: ALSA Playback" - this is actually plays sounds

2. "ShadowWarrior.bin.x86: Simple DirectMedia Layer" - this doesn't actually seem to output anything (according to the bar in pavucontrol)

In the SW Audio menu I can only select "Stereo 2.0".

This might be relevant: I actually have to sound cards (onboard and a soundblaster xfi), the onboard one is only used for stereo output to headphones and shouldn't be used here (and it isn't, the sound comes out of my 5.1 speakers). the xfi is the default device that is used by everything unless explicitly told to use the onboard card.
Anyway, /maybe/ the code that selects the available the speaker layout for the menu entrie probes the wrong card? (Could be total ♥♥♥♥♥♥♥♥, just an idea)
Thanks for the info, will help me figure this out. The gameplay/menu music+stx are likely using alsa, while the prerendered movies are using the Simple DirectMedia Layer.
what I meant to type but somehow forgot: both output streams are stereo.

having the second stream for video makes sense and it probably is easier to output to SDL from theoraplay than to fmod.

The startup video mentions bink videos, I wonder if bink is even used? (Just curious ;-))
Bink is used in the Window's version. I ported all the video playback to theoraplay for Mac and Linux ports.

I'm also only able to choose stereo speakes in-game. I only have onboard audio and I'm running Ubuntu 14.04. Alsa is configured to 5.1 and confirmed running the speaker-test tool as below.

$ speaker-test -Dplug:surround51 -c6 -l1 -twav speaker-test 1.0.27.2 Playback device is plug:surround51 Stream parameters are 48000Hz, S16_LE, 6 channels WAV file(s) Rate set to 48000Hz (requested 48000Hz) Buffer size range from 22 to 5461 Period size range from 11 to 2730 Using max buffer size 5460 Periods = 4 was set period_size = 1365 was set buffer_size = 5460 0 - Front Left 4 - Center 1 - Front Right 3 - Rear Right 2 - Rear Left 5 - LFE Time per period = 8.530579
I'm guessing this was not solved? same issue, 2.0 only

Same here with 5.1 setup, but the sound is actually surround, i think. All speakers seams to work.
