You must be reading your game settings wrong. Keep in mind that if you switch out and then back in AI players, the AI defaults back to normal. You can also give yourself a money advantage in vs. AI games.
If you're having that much problem vs. the AI, I'd watch some Youtube videos on SC2 strategy if I were you.

Find out what the best postition for the towers is, to avoid
unneccesary losses and put healers (one or two) on them as well
forget building a strong castle in the beginning, that will come later
sell things you don't really need to get the money in the beginning, taxes 2 or 3
enclose at least the stronghold for lord protection with a gate,
build at least 1 crossbow, one blacksmith and one armourer in the beginning
lots of apples (quick food) and later better quality food, later on grain and bakery's
you can also enclose the granary with walls and a gate against fire

I highly recommend using a peace timer in the advanced options to start with, then you'll feel safer placing your industry/food buildings and getting an economy going. Also, make sure you select an opponent that is befitting of a new player.
The Rat's AI seems to be one of the best fits if you're new to the game. He mounts very poor sieges and uses a lot of conscripts, which are easily dispatched. He virtually never creates high quality units (swordsmen, etc.).
However, his castle can be difficult to traverse because it's so chaotically built and he can be irritatingly effective at harassing neutral captured keeps with his crappy units.
Also, do whatever you can to get yourself in high favor with the townsfolk. A church is easy to get off the ground because candles require no materials to create. If you do well in this area, you can tax them higher and use the gold to bolster yourself.
