You would still be able to block these things, and i think the best thing to do in regards to this would be to balance it around a 1 block weight cost.
Bonus points if Agatha/Percival/Cleese/Jaime weapon skins are a thing
If it has more parrying power than the katana for less weight it would definitely be a decent choice. It would be fun to parry, trigger the parry skill and then go berserk on things.
I think a lot more emphasis needs to be put on the parrying mechanic in general. Most berserkers I have seen never parry, and a lot of them end up dying as a consequence. The damage mitigation from parrying is 75% of what makes a zerk player a good tank, and combined with the parry skill you're getting more damage resistance than the resistance skill gives, with bonus damage to melee.
If a punching were to be unique, having a very fast parry time might help. It would be great to parry a spinning gorefiend blow-for-blow and then punch his lights out. Some kind of power fist might be needed though to make it seem feasible, because I think punching a fleshpound's face would break your hand badly.
Funny you should mention that, I heard once upon a time they were working on one. That being said I can understand why they dropped it in favour of just having one melee perk.
When it comes to a zerk weapon, damage breakpoints and parry power are also important things to look at. Would it be worth buying the brass knuckles because you mitigate more damage with parrying? Does it offer a crazy DPS? Does it take fewer hits to kill than other weapons?
Maybe the fist weapon could be fleshpound blender hands?
