Kite the map and stick together while doing so.
Deaths usually occur by being overwhelmed. Kiting allows you to keep the Zeds "in front of you" so you don't get surrounded.
Grab the map Ice Arena and practice there. Easy ammo and no corners.
But with that said, beating the game on normal, especially solo, isn't that difficult. You're just new to the game so there's probably a lot you gotta learn including dealing with the boss. The boss is a fundamentally different experience than the waves leading up to it, so I wouldn't be surprised if the two of you are having trouble there.
For instance, you mentioned the ability to soak up bullets. For Pat, you are meant to hide behind cover when he's shooting. You're not supposed to stand in the open.
Other good stuff to know include shooting at his right arm cause it takes more damage.
He also announces all his attacks before he does it.
Edit: also map knowledge is also good. You may be doing a lot of kiting with the boss (and for sure you'll need kiting skill with the normal waves as you move up in difficulty)
Playing Solo normal you'll get a wave of maybe 35 zeds on round 3, then same round same difficulty but with 4 players you'll get about 100.
Perk levels do help, but mainly just stick to Normal till about level 10 then anything but Hell on Earth is doable
- Literally double the number of zeds per wave going from 1 -> 2 players (smaller increases from 3-6, but a big jump initially)
- Double the number of active zeds at any one time (16 in solo > 32 coop)
- Increased HP values on the tougher zeds (most of the trash are identical...but the Scrakes and Fleshpounds get much more head and body HP, almost triple the solo value at 6 players)
Geeky spreadsheet with waaaaay more information than you need[docs.google.com] - the zeds tab shows how the HP increases on different difficulties and player counts though.
