Don't want to be a Debbie Downer, but I don't think that's possible. I don't know much about enemy design or coding but I doubt enemy AI is something you can just switch on the fly, or at all. Don't get me wrong, I agree, options are good, but I don't think this one is technically... feasible, if not possible.
I'm not sure what you mean by "original levels"? The level design hasn't changed, they just added more levels (like the new episode by Machine Games and Quake II 64). Or are you referring to the way the game looks? In which case, I think disabling all the graphics enhancement should get you close to there anyway, especially lighting. Or is it baked-in?
If I had to add a suggestion, I'd definitely add a toggle for the damage indicator (that's damage TO player, not the hit indicator, that's damage to enemies). Frankly, I like the remaster as is, but this damage indicator is the only "modern FPS" addition I can do without and it seems strange to me that all other features like this have a toggle, while this one doesn't.
Go to your install folder, then this location:
Quake 2\rerelease\baseq2
Create an "autoexec.cfg", and simply add those three lines to it and save.
