Just pick Asura if you plan trying it. FFXI is a huge, daunting task if you start green. So go where you might run into more people. Other server ain't be but they old click of old players that usually talk against Asura.
I moved on to WoW myself, FF14 is just not interesting with crafting / gearing wise being FFXI. Too blend and generic.
My honest opnion, love FF11, I still think it's the best MMO ever created. Tanaka is a mastermind like non other. But development is really and the grind is hardcore.
If your goal is just to experience the story, again Asura is the best server for it as it provide the more stocked up Auction House. You can probably do all stories in Orders and that would take you probably around 5-6 months if you no life the game. And over a years if you play casually.

and they have trusts you can get so it's having a party all the time.
i will warn, you MUST be patient in this game as its a slow crawl
very VERY slow, much slower than wow classic/vanilla.
the game is way more about the journey than the endgame.
use the wiki guide since that'll be your best friend.
It's very jank and old, and definitely meant to be played differently than more modern MMOs though. It's more about the journey than the destination.
