Our updates to the UI were mainly in part to try and make it easier to use and make it easier to find and access many of the tools that were previously hard to find.
We've moved many of these buttons, like the Tidally Lock, Convert Fragment to Full Body, Settle Liquid, and more to Action buttons at the top of each tab so they're more discoverable and don't require scrolling through a long list of buttons and other properties.
We've moved somethings that we think are a little more fun, like Tidally Lock and Explode, to the Overview tab to make them easier to find and use, but we do also include the Tidally Lock button in the Motion tab. If you can't find the Action you're looking for, you can expand the list of Action buttons at the top of each tab as well.
In addition to the new Action buttons are there other aspects of the UI that you find are making Universe Sandbox more difficult to play now?
Can you tell us where we can find the option to lock certain parameters like Mass or Radius or Density?
The easiest way to do this is to slightly adjust the object's Radius and then adjust it back to make the lock symbols appear. You can then choose which of those three properties you want to hold while the other two change by locking that property.
