Report a translation problem
1 - I'm not sure why the axis of the star would have changed, but it does appear that using the "Make 2D - Zero All Height Values" feature makes some undesired changes to rotational period, too. I'll make a note to check on how it's affecting rotations, because that shouldn't be happening.
2 - We're aware of an issue with editing Rotation Axis via the Properties Panel. This broke recently and hopefully we can get it working again soon.
3 - Yes particles will move in respect to their parent bodies when using Edit, if they were specifically created around the body. This makes sense in a lot of cases where you'd want rings to move with a planet, for example, but I can see how it doesn't make sense in your case.
I'm not certain what your best solution here is, but maybe you could simply replace the star. Delete the current one, add an identical new one, then use "Auto Orbit" in Tools to keep everything moving as it was.
but for my single-star protoplanetary disk, it's a fine stopgap.
i guess the best suggestion i can make is perhaps a toggle for "attaching" orbiting bodies in edit mode, so that you can rotate an object with it's particles, bodies, both, or neither.
