How high do Ability Level goes (like Blacksmithing)?
Is it capped at 5 or something?

All abilities are capped at 5 base. They can be taken above that by gear and/or traits.

Only some will benefit from being higher than 5. Crafting and Blacksmithing are among those that don't.

As far as gearing abilities past lvl 5 goes, here's what I've collected/not collected so far:

Weapons-
All: 6=60% bonus damage | 7+?

Defense-
Body Building & Will Power: 6+?
Shield Spec: 6=30% block chance | 7+?
Armor Spec: 6+?

Skills-
All: No additional benefits (confirm?)(Is there any gear with +skill?)

Personality-
Bartering: 6+?
Charisma: 6=Attitude +30, 9/10 points/win | 7 - Attitude +35 10/11 points/win | 8+?
Leadership: 6=Body Building +1 | 7+?
Lucky Charm: 6=+18 offense rating, 8% lucky find, various item chance changes | 7+?

Craftsmanship-
Blacksmithing/Crafting/Loremaster: 6+ Only affects crafting/identifying speed
Telekinesis: 6+?

Nasty Deeds-
All: 6+?

Basically, % based abilities seem to be boosted from going above 5 with gear/items, you just get an additional percentile bonuses that mirrors the previous ones.

Leadership seems to be an outlier in that it also benefits from being taken to L6.

Never found any gear with bonuses to "class" abilities like Scoundrel or Marksman.

I found I needed a Blacksmithing of 7 to use the grindstone on a level 20 crafted two-handed axe. However, I found level 6 was good enough for the level 21 and 22 weapons, so maybe I encountered some kind of bug.

I know I have a character with "Level 7 Blacksmithing" also, Level 5 Base with a +2 from Gear, but it doesn't show anything beyond Level 5. Never really found any need to for more than 5 though...

You probably just had wrong character selected before you went on to combine items, cause your active character is the one who's going to craft an item, not the one whose inventory you're browsing.

Nope, I never moved the item out the smith's inventory after he made it. I even reloaded and made few new axes using some large steel bars I had in inventory. I couldn't use the grindstone on them until I increased the blacksmith skill to 7.
