You can change it via .xml.
First of all, you must know the chicken barn brand, then just jump to game's directory and open ....data/placeables.
Look for the folder's brand (Lizard for example) and open it. Search "ChickenBarnbig" folder, open it and then, open the .xml file, press "ctrl+f" and paste "maxNumAnimals".
You should see 2000 just to the right, so you must modify it to the desired qty.
Edit to p.s.: Change the file options to "read-only" to prevent changes via updates.
When in the animal view screen you can choose to allow breeding or restrict it, you don't need to edit anything.
would you be willing to provide a screenshot of that please? I have a chicken coop and I don't recall seeing that option. Though I am also at max cap
