As for Mulching, etc, these steps are optional. The difference between not mulching/rolling and doing them only results in a loss of 5% yield from not doing them compared to doing them.
Mulching is done automatically IF you let the harvester "spread" instead of "swat".
The MacDon has a draper cutter that "mows the crops" - it cuts them and leaves a swath behind. Unlike a harvester, the crop hasn't been threshed yet, so the swath is the crop.
A combine header also cuts the crops and, for some crops, a harvester can leave a straw swath behind.
Edit: And about the question - using the MacDon gives you 25% more yield (and straw) but requires more work and equipment. Leaving a straw swath adds work to collect and you can sell or use the straw, but not swathing results in a mulched state, saving the work of collecting straw and the work of mulching.
